Tag Gateway changes WHERE your Google tags load from. Server-side GTM changes WHO writes the cookie — and only the cookie-writer can beat Safari's 7-day cap. GTG is first-party delivery, not cookie lifetime: _ga and Ads cookies are still JavaScript-set, so ITP truncates them to 7 days (~24h on gclid traffic). Chrome and Android are untouched.
